Baingan Bharta (Eggplant)

Bharta is an Indian dish made of eggplant when cooked whole.


  • 1 large eggplant

  • Finely cut spring onion 100 g

  • Grated ginger 12 g

  • Freshly ground cumin* 2.5 g

  • Freshly ground coriander* 2.5 g

  • Amchur (mango powder) 5 g

  • Ghee 8 g


Take the stem off and grease the eggplant with ghee. To cook it - 

I] You may roast it on a skillet, turning it every few minutes for a total of about 25 minutes. 


II] Preheat oven at 450°F, cover the eggplant in foil completely, and cook for 1 hour. Turn it every 15   minutes.

  1. Once tender, peel off the skin of the eggplant and mash the eggplant into a pulp.

  2. In a pan, sauté the ginger with ghee.

  3. Add the eggplant, spring onions as well as the cumin, coriander and mango powder. Mix the ingredients evenly.

  4. Cover the pan and let simmer for 10 minutes.

Serves four.

*Roast cumin and coriander seeds, and grind them.
