Root Vegetable Medley

Ingredients:

  • Yam (1 unit) 219g

  • Potato (1 unit) 155g

  • Beetroot (1 unit) 162g

  • Parsnip (2 units) 133g

  • Radish (6 units) 164g

  • Olive Oil

  • Garlic

  • Fresh herbs for seasoning (optional)

Preparation:

  1. Peel the vegetables. Wash them thoroughly.

  2. Cut them one inch diced.

  3. Steam for about 15 minutes.

Serves four.

Sautée garlic in olive oil to add to the steamed vegetables and season the dish with thyme if you prefer to spice the dish.
