Kale-Potato Salad

Ingredients:

  • 2 small to medium sized potatoes

  • A bunch of kale

  • Water to cook

Preparation:

  • Wash the vegetables thoroughly.

  • Pluck kale into bite-sized pieces

  • Dice potatoes into quarter inch pieces

  • Add water to the ingredients and steam them together for about 15 minutes or until cooked.

Serves two.

Tip: A side of hummus and a teaspoon of sesame oil for dressing go well with this salad.
