Sweet Potato Delicacy

Portion for one serving

INGREDIENTS

  • 150g sweet potato 1cm cubed

  • 1/2 cup green onions (scallions) chopped

  • 1/2 tbs coconut oil

  • Note: Peel the sweet potato until you see the salmon pink color on the inside.

  • Then cut it in 1cm cubes.

PROCESS

  1. Cook sweet potato in coconut oil at low to medium flame in a pan.

  2. Once the sweet potato is all done, add green onions, and cover the pan on low flame for a minute.

    Tip: It's a great combination with some lettuce or spinach as salad.

    Optional: Add 1/4 cup of coconut milk toward the end of your cooking to give it some gravy and eat it with a side of rice.
