Thai Coconut Soup

INGREDIENTS

  • 1 quart chicken broth

  • 1 1/2 cup coconut milk

  • 1 tsp freshly grated ginger

  • Juice of 1 lemon

  • 1-2 cup pulled cooked chicken

  • 1-2 green onions, chopped

  • chopped cilantro

PROCESS

  • Bring the stock to a boil, skim any foam that rises to the top

  • Add coconut milk, lemon juice, ginger, and chicken.

  • Simmer for about 15 minutes.

  • Ladle into soup bowls or mugs and garnish with cilantro and green onions.

*Note:

  • The quantity of ingredients mentioned in the recipes are usually adult doses which may be modified for children accordingly.

  • You could blend the mix if your child can’t chew and swallow well.
